meat loaf sandwich

Ingredients


  • For the meatloaf:
  • 1 tablespoon olive oil
  • 1 small Spanish onion minced
  • Salt
  • 3 cloves garlic minced
  • 175 grams coarsely crushed water biscuits/cream cheese biscuit such as Nabisco Saltine
  • About 24 water biscuits/cream cheese biscuit
  • 120 millilitres full-cream milk
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 2 large eggs
  • Freshly ground black pepper
  • 450 grams ground beef chuck
  • 225 grams ground pork
  • 225 grams ground veal
  • 10 grams chopped fresh parsley
  • For the glaze:
  • 120 millilitres ketchup
  • 4 tablespoons brown sugar
  • 4 tablespoon apple cider vinegar
  • 4 slices sharp Cheddar
  • 4 potato rolls buttered and toasted
  • Dill pickles (3 to 5 per sandwich)
  • 1 tin crispy onions such as French's French Fried Onions or deep fried onion rings
  •  HOW TO MAKE
  • Method

      For the meatloaf:
    1. Preheat the oven to 180C/Gas Mark 4. Heat a small frying pan over a medium heat. Add the oil and onions season with some salt and saute until translucent 3 to 5 minutes. Add the garlic and saute for 1 to 2 minutes without letting the garlic brown. Remove from the heat and allow to cool.
    2. In a large bowl put the biscuits/crackers milk mustard Worcestershire hot sauce and eggs. Whisk together and then sprinkle with salt and pepper. Add the meat parsley and cooled onions. Mix with your hands until evenly combined.
    3. Bake a tester meatloaf patty to taste and test the seasoning adjusting as necessary. Using your hands gently form the meatloaf into a loaf about 22.5 x 12.5cm. Place on a baking sheet.
      For the glaze:
    1. In a small bowl combine the ketchup brown sugar and apple cider vinegar. Spoon half the glaze over the meatloaf. Be sure not to touch the meatloaf with the spoon and then put that spoon back into the glaze; don't cross contaminate people!
    2. Bake until the meat registers 71C on an instant-read thermometer about 1 hour. Leave to rest for 20 minutes before slicing the meatloaf for sandwiches.
      To build the sandwich:
    1. Place a slice of cheese on the bottom griddled bun then a slice of meatloaf spoon some extra glaze on the loaf pop on a few pickles and top with crispy onions. Repeat to make 3 more sandwiches.
      Cook's notes:
    1. The key to my meatloaf and even my meatballs: always use 1 egg for every pound of meat you have...you'll thank me later.
    2. There will be lots of extra meatloaf to eat later.

A quick and easy no bake cheesecake that will delight kids and adults alike

No-Bake Strawberry Milkshake Cheesecake

Ingredients


  • 2 packets Strawberry Cream Oreo biscuits
  • 70 g butter melted
  • 750 g cream cheese
  • 1/2 cup sugar
  • 1 cup Nestle Strawberry Nesquik
  • 1 tbs milk
  • 250 mls thickened cream whipped
  • Method

    • STEP 1Lightly grease a 24cm (9 inch) springform tin.
    • STEP 2Blitz or finely crush the biscuits.
    • STEP 3Stir the butter into the biscuit crumb, then press the crumbs across the bottom and 1/2 way up the sides of the tin. Refrigerate.
    • STEP 4Using an electric mixer, beat the cream cheese until smooth. Then add in the sugar, Nesquik and milk beating until well combined.
    • STEP 5Stir in the cream.
    • STEP 6Pour into the base, then cover with plastic wrap and refrigerate for at least 6 hours.
    • STEP 7Decorate with whipped cream, strawberries, mini Oreos and sprinkles.

This yummy bread is delicious served with butter

Chocolate Chip, Banana and Strawberry Bread

Ingredients


  • 200 g fresh strawberries
  • 1 3/4 cups banana mashed
  • 1 cup plain flour
  • 2 cups self-raising flour
  • 1 cup oil
  • 1 cup sugar
  • 4 eggs beaten
  • 1/2 tsp ground cinnamon
  • 2 tsp vanilla essence
  • 1 cup dark chocolate chips
  • 1 pinch salt
  • Method

    • STEP 1Preheat oven to 180C. Grease and line the bottom of 1 large loaf tin with baking paper.
    • STEP 2Hull the strawberries and dice into small pieces.
    • STEP 3In a large mixing bowl, combine the strawberries and banana with the oil.
    • STEP 4Stir in the eggs, vanilla, sugar, salt and cinnamon.
    • STEP 5Stir in flours and mix until just combined.
    • STEP 6Stir in the chocolate chips.
    • STEP 7Pour mixture into the tin, then cook for 1-1 1/4 hours, or until a skewer comes out clean.
    • STEP 8Leave in the tin to cool for 10 minutes, then turn onto a wire rack. Serve warm or cold.

    Notes

    Mix the chocolate chips with about 1 dessert spoon of flour, then they wont sink to the bottom of the loaf. If the cake starts browning too much before fully cooked, cover with aluminium foil.

A delicious combination of chocolate and peppermint

Triple Chocolate Peppermint Slice

Ingredients


  • 200 g dark chocolate
  • 200 g mint chocolate
  • 60 g copha
  • 4 cups Kellogg's Rice Bubbles
  • 250 g white chocolate
  • 30 mls peppermint syrup
  • Equipment

    • heatproof bowl
    • slice pan
    • Method

      • STEP 1Line slice pan. Melt dark chocolate, mint chocolate and copha together until smooth.
      • STEP 2Pour over the Rice Bubbles and then firmly press into slice pan.
      • STEP 3Melt white chocolate and mint syrup and stir to combine. Pour over slice.
      • STEP 4Leave to set before slicing.

      Notes

      The texture and taste varies depending on if you store it in the fridge or not, so try both and see which you prefer. I sprinkled chocolate sprinkles on top before it set, but that's completely optional and does not enhance the taste at all.

Christmas Florentine Slice

Ingredients


  • 2 cups Kellogg's cornflakes
  • 1/2 cup oats
  • 1 tsp lemon zest
  • 1 tsp orange zest
  • 1/2 cup dried apricots chopped
  • 1/2 cup sultanas
  • 70 g toasted slivered almonds
  • 50 g shredded coconut
  • 1/4 cup pistachios chopped
  • 1/2 cup dried cranberries
  • 200 g condensed milk
  • 120 g milk chocolate
  • Method

    • STEP 1Preheat oven to 170C. Line a 20 x 30cm baking tin with baking paper.
    • STEP 2Place all ingredients except the chocolate in a glass mixing bowl and stir until well combined.
    • STEP 3Pour mixture into the tin and spread evenly. Place into the oven for 20-25 minutes until golden. Remove and cool on rack.
    • STEP 4Melt chocolate in a bowl over simmering water into a liquid form. Using a spatula, spread chocolate evenly on bottom of slice. Leave to set in fridge.
    • STEP 5Cut into muesli bar sized slices.
    • STEP 6Place 4 slices in clear cellophane with Christmas ribbon.

    Notes

    You can use milk or dark chocolate.

An easy to make, quick and yummy snack that my 10 year old son helped make.

Chocolate Chip Cookies

Ingredients


  • 125 g butter softened
  • 1/2 cup brown sugar
  • 2/3 cup caster sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 1/2 cups self-raising flour
  • 1 cup milk chocolate chips
  • Method

    • STEP 1Preheat oven to 160C.
    • STEP 2Cream together butter and both sugars.
    • STEP 3Whisk in the vanilla essence and then the egg.
    • STEP 4Add in the self-raising flour, then add in the chocolate chips.
    • STEP 5Place several teaspoons of the mixture onto a tray lined with baking paper.
    • STEP 6Once cooked, they need to cool down on a wire rack.
    • STEP 7Enjoy your yummy cookies!!

Malteser Christmas Cake

This sneaky cake looks like a Christmas pudding but tastes like a delicious chocolate cake covered in Maltesers! 

Ingredients

    Malteser Christmas Cake recipe
  • 1 1/2 cup brown sugar
  • 1 cup milk
  • 190 g butter
  • 1 1/4 cup self-raising flour
  • 3/4 cup plain flour
  • 3/4 cup cocoa powder
  • 4 eggs
  • 300 g dark chocolate melts
  • 125 mls thickened cream
  • 30 g butter
  • 465 g Maltesers
  • 200 g white chocolate melts
  • 2 Jaffas
  • Method

    • STEP 1Preheat the oven to 180˚C. Grease the inside of your pudding steamer with butter.
    • STEP 2In a large bowl put the brown sugar, milk and butter and melt it all together in the microwave.
    • STEP 3Now whisk in the dry ingredients: flours and cocoa. Mix the eggs together in a jug and whisk them in too.
    • STEP 4Whisk until it's all combined. Pour it into your steamer and put it in the oven (no lid) for 40 minutes. Check it after 40 minutes and turn the heat down to 170˚C.
    • STEP 5Cook for another 10 minutes or until a skewer comes out clean. Let it cool completely before adding the ganache.
    • STEP 6To make the ganache, melt the dark chocolate, butter and cream together in the microwave. Leave it for about 15 minutes to set and thicken.
    • STEP 7Cut the bumpy top off your pudding cake, so that you can flip it over and decorate it down side up.
    • STEP 8Cover the cake with ganache.
    • STEP 9Before the ganache cools completely, start adding the Maltesers. Begin in the centre, forming one row down the middle of the cake. Work outwards from there in lines across the cake.
    • STEP 10Put the cake in the fridge to chill for at least two hours.
    • STEP 11Once the cake is chilled, melt the white chocolate melts in a bowl in the microwave. Leave them to cool to room temperature before you pour them over the cake (otherwise all the Maltesers will melt.)
    • STEP 12Once the chocolate is just at room temperature (don't wait too long or the chocolate will start to set hard again) pour it over the top of your cake so that it looks like the custard on a Christmas pudding.
    • STEP 13Finish it off with two Jaffas and some any glossy green leaves you can find in your garden. You could also use the holly from a Christmas decoration.

    Notes

    You can put whatever cake recipe is your favourite cake recipe inside the "pudding."
    Decorate your pudding with Jaffas, raspberry lollies or even glace cherries.
    If you don't have a pudding steamer, you can cook your cake in a glass Pyrex bowl
