Chocolate Chip, Banana and Strawberry Bread
Ingredients
- 200 g fresh strawberries
- 1 3/4 cups banana mashed
- 1 cup plain flour
- 2 cups self-raising flour
- 1 cup oil
- 1 cup sugar
- 4 eggs beaten
- 1/2 tsp ground cinnamon
- 2 tsp vanilla essence
- 1 cup dark chocolate chips
- 1 pinch salt
Method
- STEP 1Preheat oven to 180C. Grease and line the bottom of 1 large loaf tin with baking paper.
- STEP 2Hull the strawberries and dice into small pieces.
- STEP 3In a large mixing bowl, combine the strawberries and banana with the oil.
- STEP 4Stir in the eggs, vanilla, sugar, salt and cinnamon.
- STEP 5Stir in flours and mix until just combined.
- STEP 6Stir in the chocolate chips.
- STEP 7Pour mixture into the tin, then cook for 1-1 1/4 hours, or until a skewer comes out clean.
- STEP 8Leave in the tin to cool for 10 minutes, then turn onto a wire rack. Serve warm or cold.
Notes
Mix the chocolate chips with about 1 dessert spoon of flour, then they wont sink to the bottom of the loaf. If the cake starts browning too much before fully cooked, cover with aluminium foil.
