Scotch Eggs

Scotch Eggs


Great for a picnic lunch as well as a family meal.






















Ingredients

  • 4 eggs hard-boiled peeled
  • 3/4 cup plain flour
  • 250 g sausage meat
  • 1 tsp garlic minced
  • 1 tbs mixed herbs chopped
  • 1 egg beaten
  • 1 cup white dried breadcrumbs
  • 1 pinch salt and pepper
  • Method

    • STEP 1Roll the eggs in flour.
    • STEP 2Combine sausage meat, garlic, herbs and salt and pepper.
    • STEP 3Wrap meat around the hardboiled eggs.
    • STEP 4Brush with beaten egg and roll in breadcrumbs.
    • STEP 5Fry in hot oil for about 7 minutes.

This is a heavenly chocolate cake.

All-in-One Chocolate Cake











Ingredients

  • 175 g margarine
  • 175 g brown sugar
  • 3 tbs cocoa powder
  • 2 tbs boiling water
  • 3 large egg beaten
  • 175 g self-raising flour sieved
  • 50 g ground almonds

Filling

  • 150 mls whipped cream

Topping

  • 125 g milk chocolate melted
  • 1 cup glace cherries *to decorate
  • Method

    • STEP 1Preheat oven to 180C.
    • STEP 2Grease and line the base of 2 x 16 cm sandwich pans. Blend and cool cocoa with boiling water.
    • STEP 3Place all the ingredients in a mixing bowl and beat with a wooden spoon or electric mixer until well mixed.
    • STEP 4Do not over beat.
    • STEP 5Place half the mixture into each of the preheated pans and bake for 25-35 minutes.
    • STEP 6Turn out and cool on a wire rack.
    • STEP 7To decorate: Sandwich the cooled cakes together with the whipped cream.
    • STEP 8Spread melted chocolate over cake.
    • STEP 9Decorate with the glace cherries or walnuts.

This cake is very tasty and very quick to make. Kids can help too!

Tea Cake










Ingredients

  • 2 cups self-raising flour
  • 3 eggs
  • 1 cup caster sugar
  • 600 mls thickened cream
  • 3/4 cup sultanas
  • 1 cup chocolate broken into pieces
  • 1 tbs unsalted butter room temperature
  • 2 tbs vanilla sugar
  • 1/2 cup icing sugar
  • Equipment

    • 24cm bundt cake pan
    • bowl
    • Method

      • STEP 1Preheat oven to 160C and grease a bundt pan with butter dust with breadcrumbs.
      • STEP 2Sift flour into a large bowl, add eggs, sugar, cream and sultanas or chocolate and mix with a wooden spatula until well combined.
      • STEP 3Pour cake mixture into your prepared pan and bake for approximately 1 hour or when you put in a skewer and it comes out clean.
      • STEP 4Once removed from oven, using a wet tea towel, turn the bundt pan upside down to easily removed the cake from the pan. Wait until the cake cools, then sprinkle with combined vanilla sugar and icing sugar.
      • STEP 5Enjoy with your favourite coffee or tea.




Chicken Alfredo

Chicken Alfredo


A creamy, garlic chicken dish that melts in your mouth. A winner with kids and adults alike.















Ingredients

  • 400 g fettuccine
  • 250 g cream cheese
  • 6 tbs butter
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 2 tsp black pepper fresh
  • 2 bottles chicken breast fillet cooked cubed
  • 2 cup broccoli fresh chopped
  • 2 zucchini julienned
  • 1/2 cup capsicum chopped
  • Method

    • STEP 1Bring a large pot of lightly salted water to a boil.
    • STEP 2Add pasta and cook for 10 minutes, then drain well.
    • STEP 3While pasta is cooking melt cream cheese and butter in a pan over low heat. Stir until smooth.
    • STEP 4Stir in milk and season with garlic powder, salt and pepper.
    • STEP 5Simmer for 3 minutes stirring constantly.
    • STEP 6Mix in chicken, broccoli, zucchini and red pepper.
    • STEP 7Cook for 3 minutes over medium heat then reduce heat and simmer for a further 5 minutes.
    • STEP 8Serve over fettuccine.

Chell's Chicken Pie

Chell's Chicken Pie


A yummy chicken and vegetable pie that is easy to make.















Ingredients

  • 600 g chicken pieces diced
  • 1 1/2 cup frozen mixed vegetables diced
  • 375 mls evaporated milk
  • 45 g chicken noodle instant soup
  • 1 chicken stock cube
  • 3 bacon rashers diced
  • 1 tsp garlic flakes
  • 1 1/2 tbs cream
  • 1/2 cup fresh breadcrumbs
  • 2 tbs butter
  • 1 pinch salt and pepper
  • 1 pinch mixed herbs
  • 1 pinch parsley
  • 2 sheets puff pastry
  • Equipment

    • casserole dish
    • Method

      • STEP 1Preheat oven to 180C.
      • STEP 2Line casserole dish with baking paper and then puff pastry.
      • STEP 3Bake puff pastry while preparing filling, ensuring pastry does not burn.
      • STEP 4Brown chicken in fry pan.
      • STEP 5Add vegetables and bacon and cook for approximately 2 minutes.
      • STEP 6Combine evaporated milk, soup mix, stock cube, garlic and stir. Add to fry pan.
      • STEP 7Simmer for approximately 5 minutes stirring frequently to allow liquid to start to thicken.
      • STEP 8Stir in cream.
      • STEP 9Spoon filling into casserole dish.
      • STEP 10Season breadcrumbs with salt, pepper, herbs and parsley.
      • STEP 11Melt butter and stir through breadcrumbs until well combined.
      • STEP 12Spread over top of filling and bake for 15-20 minutes.
      • Notes

        Bacon stock can also be used. I used garlic granules.

Cheesy Tomato Chicken Fillets

Cheesy Tomato Chicken Fillets


These easy-to-make cheese filled chicken parcels make family cooking so easy!














Ingredients

  • 2 tbs Leggo's pizza sauce
  • 1 cup pizza cheese grated
  • 1 tbs fresh basil leaves finely chopped
  • 4 chicken breast fillet
  • 2 tbs olive oil
  • 500 g Leggo's bolognese pasta sauce jar
  • 1 scoop mashed potato *to serve
  • 1 handful asparagus steamed *to serve
  • Method

    • STEP 1Combine Leggo’s Pizza Sauce, cheese and basil in a small bowl. Using a small sharp knife, make a pocket in each fillet. Spoon ¼ of the cheese mixture in each pocket. Secure well with toothpicks or small skewers.
    • STEP 2Heat oil in a non-stick frypan over medium heat and brown chicken well on both sides. Reduce heat and pour Leggo’s Pasta Sauce around the chicken. Cover with a lid and simmer for a further 8-10 minutes or until chicken is cooked through. Rest for 5 minutes before removing toothpicks.
    • STEP 3Spoon sauce onto serving plates and top with chicken. Serve with mashed potato and steamed asparagus.
    • Notes

      Tip: chicken can be filled a few hours ahead and refrigerated until required.

Cheesy Crumbed Chicken Strips


Cheesy crumbed chicken strips are a smaller and tasty version of chicken schnitzels. This scrumptious dish will definitely please the family.













Ingredients

  • 3 chicken breast fillets
  • 2 eggs large lightly beaten
  • 1 tbs milk
  • 1/2 cup plain flour
  • 1 cup dried breadcrumbs
  • 1/2 cup parmesan cheese grated
  • 3 tbs oil
  • 3 tbs butter
  • Equipment

    • frying pan
    • Method

      • STEP 1Flatten chicken and slice into strips.
      • STEP 2Place egg and flour into two separate bowls. Stir milk into egg.
      • STEP 3Mix breadcrumbs and cheese together in another bowl.
      • STEP 4Cover each strip in flour, then egg and then coat in breadcrumb mixture.
      • STEP 5Heat 1 tbs of each oil and butter in a frypan and cook a third of the chicken strips until lightly brown. Repeat with the rest of the chicken.
      • STEP 6Drain cooked chicken on absorbent paper.
      • Notes

        Serve with salad or vegetables.
