Tea Cake
Ingredients
- 2 cups self-raising flour
- 3 eggs
- 1 cup caster sugar
- 600 mls thickened cream
- 3/4 cup sultanas
- 1 cup chocolate broken into pieces
- 1 tbs unsalted butter room temperature
- 2 tbs vanilla sugar
- 1/2 cup icing sugar
Equipment
- 1 24cm bundt cake pan
- bowl
Method
- STEP 1Preheat oven to 160C and grease a bundt pan with butter dust with breadcrumbs.
- STEP 2Sift flour into a large bowl, add eggs, sugar, cream and sultanas or chocolate and mix with a wooden spatula until well combined.
- STEP 3Pour cake mixture into your prepared pan and bake for approximately 1 hour or when you put in a skewer and it comes out clean.
- STEP 4Once removed from oven, using a wet tea towel, turn the bundt pan upside down to easily removed the cake from the pan. Wait until the cake cools, then sprinkle with combined vanilla sugar and icing sugar.
- STEP 5Enjoy with your favourite coffee or tea.
