Almond Bread
A delicious, low fat, after dinner treat to serve with coffee.
Ingredients
- 3 egg whites
- 1/2 cup caster sugar
- 1 cup plain flour
- 250 g whole almonds
Method
- STEP 1Beat egg whites with an electric beater until soft peaks form.
- STEP 2Add sugar gradually and beat until dissolved.
- STEP 3Fold in sifted flour and almonds.
- STEP 4Spread mixture into a greased log tin.
- STEP 5Bake at 180C for 30 minutes.
- STEP 6When cold, wrap loaf in foil and leave for 2 days.
- STEP 7Cut into very thin slices, using an electric knife.
- STEP 8Place slices in a single layer onto oven trays and bake at 150C for 35 minutes or until dry and crisp.
Notes
Almond bread will keep for at least a month in an airtight container. Pistachio nuts can be mixed with the almonds or used in place of. Sliced and wrapped in cellophane bags, it makes a great Christmas gift.
