A delicious Almond Bread. a great Christmas gift.

Almond Bread

A delicious, low fat, after dinner treat to serve with coffee.


Ingredients

  • 3 egg whites
  • 1/2 cup caster sugar
  • 1 cup plain flour
  • 250 g whole almonds
  • Method

    • STEP 1Beat egg whites with an electric beater until soft peaks form.
    • STEP 2Add sugar gradually and beat until dissolved.
    • STEP 3Fold in sifted flour and almonds.
    • STEP 4Spread mixture into a greased log tin.
    • STEP 5Bake at 180C for 30 minutes.
    • STEP 6When cold, wrap loaf in foil and leave for 2 days.
    • STEP 7Cut into very thin slices, using an electric knife.
    • STEP 8Place slices in a single layer onto oven trays and bake at 150C for 35 minutes or until dry and crisp.

    Notes

    Almond bread will keep for at least a month in an airtight container. Pistachio nuts can be mixed with the almonds or used in place of. Sliced and wrapped in cellophane bags, it makes a great Christmas gift.
