Crispy Chili Fish 

How to Make

Ingredients

  • 1 tbs fresh ginger grated
  • 1 tbs red Thai curry paste
  • 1 whole fish
  • 4 garlic clove crushed
  • 1/4 cup lemongrass stalk fresh chopped
  • 1 cup fresh coriander chopped
  • 2 red Birdseye chili finely chopped
  • 2 tbs fresh lime juice
  • 2 tbs sweet chili sauce
  • 2 tbs sweet chili sauce


  • Method

    • STEP 1Make four deep slits diagonally across both sides of fish. Place fish in a shallow non-metallic ovenproof dish.
    • STEP 2Combine remaining ingredients, except extra chilli sauce, in medium bowl. Pour over fish, refrigerate up to 3 hours.
    • STEP 3Preheat oven to 180C.
    • STEP 4Cover dish with a lid or foil, bake for about 35 minutes or until fish is cooked through.
    • STEP 5Brush fish with extra chilli sauce, then grill for about 10 minutes or until skin is browned and crisp.
