Chicken Fillets in Cream Recipes

Chicken Fillets in Cream

Hearty, but not heavy.



Ingredients

  • 2 chicken breast fillet
  • 1 brown onion peeled thinly sliced
  • 1 clove garlic diced
  • 2 97% fat-free rindless bacon rashers chopped
  • 1 tsp baby capers
  • 1 tsp dijon mustard
  • 2 pinches fresh curly parsley chopped
  • 2 tbs thickened cream
  • 1 tbs olive oil
  • 500 g pasta *to serve


  • Method

    • STEP 1Heat a large pan and add a dash of olive oil.
    • STEP 2Add the onion, garlic, bacon, capers and mustard. Toss until onion starts to turn translucent and bacon is beginning to brown.
    • STEP 3Push all ingredients to the cool side of the pan and add the chicken fillets.
    • STEP 4Brown chicken on both sides until cooked through.
    • STEP 5Remove chicken, cover and keep warm.
    • STEP 6Add cream to pan and combine with remaining ingredients.
    • STEP 7In large serving bowls, place pasta, top with chicken fillets, sauce and parsley.
    • STEP 8Serve immediately.
