Butter Roast Chicken
Ingredients
- 1 whole chicken
- 1/2 cup butter
- 1/3 cup lemon juice
- 1 tbs paprika
- 2 tsp salt
- 1 tsp pepper
- 1 tsp brown sugar
- 1/2 tsp dried rosemary crushed
- 1/4 tsp ground nutmeg
- 1/4 tsp cayenne pepper optional
Equipment
- 1 baking dish
- 1 saucepan
Method
- STEP 1Place chicken in a baking pan or roasting dish.
- STEP 2Combine remaining ingredients in a small saucepan, and bring to a boil.
- STEP 3Remove from heat and pour over chicken.
- STEP 4Bake chicken, uncovered, at 160C for 30 minutes per 500 g plus 20 minutes extra, basting regularly.
