This recipe came about as an easy option when I wanted to make quiche

Ingredients

  • 1 slice wholegrain bread
  • 1 egg
  • 1/2 cup baby spinach
  • 1 tbs cream
  • 1 tbs Danish feta crumbled
  • 1/2 tsp salt *to taste
  • 1/2 tsp pepper *to taste
  • Method

    • STEP 1 Preheat oven to 200 C. Spray a ramekin or individual pie tin with cooking spray.
    • STEP 2 Trim crusts of bread and use a rolling pin to slightly flatten. Line ramekin with bread slice.
    • STEP 3 Whisk egg and cream in a small bowl until combined. Stir in spinach and feta and season with salt and pepper. Gently pour the egg mixture into the prepared bread case.
    • STEP 4 Bake cases for 20 minutes or until the egg mixture is set.

    Notes

    I like the strong flavour of Danish feta, however any type of feta or cheddar cheese can be used. Like a quiche the filling options are endless so feel free to add any additional extras. For a lighter option you can use 1 tablespoon milk instead of cream. You will only need about 1-2 sprays of cooking oil spray to coat each ramekin.
