All Day Lamb
Throw it in, walk away, come back later and enjoy. Leftovers are a joy to have in the fridge too
Ingredients
- 2 kgs lamb leg
- 500 g chat potato cleaned
- 4 tbs olive oil
- 1 1/2 tbs crushed garlic
- 1 tbs dried rosemary
- 1 tsp salt
- 1/2 tsp pepper
Equipment
- 1 slow cooker
Method
- STEP 1Mix oil and herbs together.
- STEP 2Place potatoes in bottom of slow cooker.
- STEP 3Place lamb leg on top.
- STEP 4Lightly baste lamb with oil mixture
- STEP 5Turn lamb over and use the rest of the oil to baste the top side.
- STEP 6Cover and cook in the slow cooker, turning lamb and potatoes halfway through cooking.
- STEP 7For well-done meat, cut deep slashes in the lamb towards the end of the cooking time.
Notes
I thought the potatoes may need a bit of oil to stop them drying out, but the condensation and other ingredients kept them moist. The juices can be used to make gravy.
