Salt and Pepper Chicken




Ingredients

  • 1/4 cup plain flour
  • 1/4 tsp Chinese five-spice powder
  • 1 1/4 tsp salt
  • 3/4 tsp ground white pepper
  • 3 chicken breast fillet
  • 1/2 cup oil
  • 1 clove garlic crushed
  • 1 tsp dried chilies chopped optional
  • 2 sprigs onion sliced optional
  • Method

    • STEP 1Combine flour and spices in a bowl.
    • STEP 2Cut chicken into 1 cm strips and toss in flour mixture to coat.
    • STEP 3Heat frypan and add enough oil to thinly cover base.
    • STEP 4Fry chicken over medium-high heat until golden. Just before removing add garlic, chilli and shallots to pan and cook for one minute.
    • STEP 5Remove and drain on paper towels. While pan is still hot fry some Asian greens with oyster or hoi sin sauce. Serve with rice.

    Notes

    You can substitute the chicken with calamari/squid or prawns and it is delicious too. Very quick and just divine to eat - kids love it too (always a plus!) Feel free to adjust the spice ratio to suit your tastes. You can also use fresh chilli
