Banana Cake
Great for morning or afternoon tea. The kids will love it.

- 1/2 cup butter
- 2 egg
- 3 banana small
- 1 tsp vanilla extract
- 1 tsp bicarbonate of soda
- 50 mls milk
- 1/2 cup caster sugar
- 1 1/2 cup self-raising flour
Method
- STEP 1Cream butter, sugar and vanilla.
- STEP 2Add eggs separately, beating well.
- STEP 3Mash bananas and add to mixture.
- STEP 4Dissolve soda in milk and add flour and milk alternately.
- STEP 5Bake in 2 greased tins or 1 large tin at 180C for 35-40 minutes or until cooked.
- I sometimes make in muffin tins, it's a good size for kids - 20 minutes cooking time. Don't know what to do with those left over bananas that are too ripe to eat? Put them in the freezer until you are ready to make a banana cake...they will make your cake very moist. Just let them defrost before making the cake.
